Ingredients

  • 60 ml silver (blanco) tequila

  • 30 ml freshly squeezed lime juice

  • 15 ml Great Honey (spicy honey)

  • 5 ml orange liqueur (like Cointreau or triple sec)

  • Chili salt, for the rim (optional)
  • Lime wedge, for garnish and rimming

  • Ice

Instructions

  1. Prepare the Dough (if making from scratch): In a large bowl, combine the warm water, yeast, and sugar. Let it sit for 5-10 minutes, or until it’s foamy. Add the olive oil, salt, and 3 cups of flour. Mix until a shaggy dough forms, then gradually add the remaining flour until the dough is no longer sticky. Knead for 5-7 minutes until smooth and elastic. Place the dough in a lightly oiled bowl, cover, and let it rise in a warm place for 1-1 ½ hours, or until it has doubled in size.

  2. Prepare to Bake: Place a pizza stone or an inverted baking sheet on the middle rack of your oven and preheat to the highest temperature your oven will go (usually 475-550°F or 245-290°C). Allow it to preheat for at least 30 minutes. Once the dough has risen, punch it down, and on a lightly floured surface, stretch or roll it into a 12-14 inch circle. Sprinkle a pizza peel or parchment paper with cornmeal before placing the dough on it.

  3. Assemble the Pizza: Spread a thin, even layer of pizza sauce over the dough, leaving a small border for the crust. Sprinkle the shredded mozzarella cheese evenly over the sauce, then arrange the pepperoni slices on top.

  4. Bake the Pizza: Carefully slide the pizza onto the preheated pizza stone or baking sheet. Bake for 12-15 minutes, or until the crust is golden brown and the cheese is bubbly and lightly browned.

  5. Finish and Serve: Carefully remove the pizza from the oven. Generously drizzle the Great Honey all over the pizza. Garnish with fresh basil leaves and a sprinkle of red pepper flakes, if desired. Slice and serve immediately.
